Ratatouille with liquorice

Ingredients
  

  • 1 small onion
  • 1 clove of garlic
  • 1 red capsicum
  • 1 small courgette
  • 1 small aubergine
  • 250 g cherry tomatoes
  • 1 gelatine leaf
  • 1 stem of thyme
  • 3/4 dl finely chopped Panda liquorice
  • salt, freshly ground black pepper
  • 1 pot of basil

For baking

  • olive oil

Instructions
 

  • Peel and finely chop the onions. Slice the capsicum. Chop the courgette and aubergine into cubes. Cut the cherry tomatoes in half.
  • Sweat the aubergine and the courgette in oil on a large pan until almost done. Add more oil, the onions and the capsicum slices. Stir the mix while continuing to fry it for a few minutes. Add the tomatoes, the gelatine leaf and the thyme to the mix and fry until the vegetables are done.
  • Add the chopped liquorice. Let it soften. Season the mix with salt, pepper and finely chopped basil.
     Serve as is or accompanied with meat, chicken or fish.
