Ratatouille with liquorice

- 1 small onion
- 1 clove of garlic
- 1 red capsicum
- 1 small courgette
- 1 small aubergine
- 250 g cherry tomatoes
- 1 gelatine leaf
- 1 stem of thyme
- 3/4 dl finely chopped Panda liquorice
- salt, freshly ground black pepper
- 1 pot of basil
Peel and finely chop the onions. Slice the capsicum. Chop the courgette and aubergine into cubes. Cut the cherry tomatoes in half.
Sweat the aubergine and the courgette in oil on a large pan until almost done. Add more oil, the onions and the capsicum slices. Stir the mix while continuing to fry it for a few minutes. Add the tomatoes, the gelatine leaf and the thyme to the mix and fry until the vegetables are done.
Add the chopped liquorice. Let it soften. Season the mix with salt, pepper and finely chopped basil. Serve as is or accompanied with meat, chicken or fish.
